I had just about decided that I wasn't going to be joining the Foodie Friday party this week. Believe me, there was no "creative cooking" being done at our house this week! This was one of those weeks that was spent trying to get twice as much done in about half the time -- I'm sure you have those too. So I pretty well figured that I was out when I remembered my "desperation dish" -- you know the kind I mean -- the one you can put together in about 3 minutes and head out the door.
This is the dish I would make back in my 20's and 30's to take to parties or gatherings -- it got to be known as "Martha's Shrimp Stuff" among our friends, family and co-workers. I used to giggle whenever anyone would ask for the recipe -- it's almost embarrassing - but here goes.
one can of tiny shrimp - I used "Bumble Bee"
one green onion
mayonaise
Old Bay seasoning
Drain and rinse the shrimp (I usually put three aside to decorate the top)
Mash. Chop onion and add to shrimp. Add enough mayonaise to get the consistancy you want. Sprinkle with Old Bay and add a squirt of lemon juice. Blend together.
Garnish as desired. Serve with crackers. This can be doubled.
Later this recipe sort of morphed into a really good shrimp cheese ball (when I'm less desperate)-- and I'll share that another day. This also can be used as a spread for shrimp salad sandwiches (which is what I'm going to do with this tomorrow for lunch - on toasted bread with a little tomato and lettuce.)

ReplyDeleteMy desperation dish is 1 8-oz. block of cream cheese. Pour Dr. Pete's Praline mustard glaze over the top and serve with Wheat Thins. Everyone loves it. Maybe I'll do a post about it and give some info on Dr. Pets's.

Ohhh anything with shrimp is far from desperate! More like delicious. My favorite deperation meal? Omlets (gotta do something with all those eggs) and "breakfast for supper".
