Foodie Friday - Corn Bread
Here we are at the end of the week heading over to Gollum's to see what everybody's bringing to Foodie Friday -- everybody's favorite potluck and recipe swap.
It seems to me that many of the soups and stews of fall call for a pan of corn bread to compliment them -- do you think so too? Here's a recipe that I just got and tried last week and it was so good -- that I almost didn't get this picture of the very last piece. It's easy and good!
Corny Corn Bread
2 small boxes of Jiffy Corn Muffin Mix
6 eggs
2 sitcks melted butter
2 cups sour cream
1/2 Cup sugar
2 cans creamed corn
Mix all ingredients. Pour into greased 9x13 inch pan. Bake at 400 for 35-40 minutes or until firm.

I love this cornbread! I usually put in 1 can of creamed and 1 can of drained regular corn, but it's the same idea! :D Jewel

I just made corn bread last week. I followed the recipe on the bag and they were as dry as dust. I would think that the sour cream added would make it moister and more tasty. I will add this to my collection. Thanks.

This cornbread recipe sounds delicious. I definitely will try it. Mine is always so dry that I quit making it...but this one...YUM!
ReplyDeleteGreat recipe....I love anything made with the Jiffy mixes..they are great as a starter to build on...I once won a cake contest by using their yellow cake mix to make pineapple upside down cake...it's so simple!!
