WARNING! Do NOT go to Foodie Friday at "Designs By Gollum" if you're on a diet! It will be very dangerous! But if you're up for it -- here's what I cooked up to bring to the table this week. Blackberry Wine Cake. I found this recipe when I was exploring blog sites and I just don't remember who to give credit to -- I also found it on one of the recipe sites as well.
Here's the "un-cut" picture of our cake. We had this as our finale for the 4th of July -- a good ending.
Here's the recipe:
1 box white cake mix
1 box blackberry jello - (I went to two stores and didn't find it -- after much pondering over using raspberry or black cherry...I went with the black cherry and it worked fine)
1/2 Cup oil
4 eggs
1 cup blackberry wine
1 cup chopped pecans (I actually used a little less than that)
preheat oven to 350 - grease and flour bundt pan. put chopped pecans in pan.
mix all the other ingrediants and pour into pan. Bake 45-60 minutes.
Glaze
3/4 c powdered sugar
1/4 c butter
1/2 c blackberry wine
melt butter - remove from heat - add sugar and wine - spoon over warm cake. This was very liquid, not really what I consider a glaze, but it did make for a very moist cake and I didn't use it all.
Of course, I didn't stop here. I "stewed" some fresh blackberries and we topped our cake with vanilla ice cream and the stewed berries -- nobody complained!

I think the stewed blackberries would be a must for me--and of course the ice cream. Gotta have the ice cream. Do you find blackberry wine in a wine store?
