Foodie Friday - Corn Bread

Here we are at the end of the week heading over to Gollum's to see what everybody's bringing to Foodie Friday -- everybody's favorite potluck and recipe swap.

It seems to me that many of the soups and stews of fall call for a pan of corn bread to compliment them -- do you think so too? Here's a recipe that I just got and tried last week and it was so good -- that I almost didn't get this picture of the very last piece. It's easy and good!

Corny Corn Bread

2 small boxes of Jiffy Corn Muffin Mix
6 eggs
2 sitcks melted butter
2 cups sour cream
1/2 Cup sugar
2 cans creamed corn

Mix all ingredients. Pour into greased 9x13 inch pan. Bake at 400 for 35-40 minutes or until firm.

Enjoy! For more temptations, be sure to check out Foodie Friday over at Designs by Gollum -- you're sure to find something you'll want to cook up soon!

See ya!

  1. I love this cornbread! I usually put in 1 can of creamed and 1 can of drained regular corn, but it's the same idea! :D Jewel

  2. Ohhh, doesn't this look so yummy! I just love good cornbread. Thanks for sharing... Dee Dee

  3. These sound great!! Love the sweeter corn bread!

  4. This sounds good. My cornbread is always a bit dry.

  5. Well, that would certainly make that Jiffy mix taste much better. I'll try this one soon.

  6. Love, LOVE cornbread Martha! This looks fabulously moist and delicious!!!

  7. What a great quick bread. I love the additions you've made. I'll wager this is delicious.

  8. O, this sounds great! I can't wait to try it...
    Thanks so much.

  9. I just made corn bread last week. I followed the recipe on the bag and they were as dry as dust. I would think that the sour cream added would make it moister and more tasty. I will add this to my collection. Thanks.

  10. Your new blog background is gorgeous! I mean, just beautiful!
I am doing fine. Patience is not one of my know. But..I am on the mend. :) This background makes me sigh with pleasure!

  11. This cornbread recipe sounds delicious. I definitely will try it. Mine is always so dry that I quit making it...but this one...YUM!

  12. Great recipe....I love anything made with the Jiffy mixes..they are great as a starter to build on...I once won a cake contest by using their yellow cake mix to make pineapple upside down's so simple!!

  13. Hi Martha! I make a cornbread almost the same and it's delicious! I love the added cream corn in there don't you?
Oh, Dear One, you're good! Mr. Precious will be 65 on Sunday! The older I get the harder time I have trying to figure out how old folks are.
Take care and be a sweetie,
    Shelia ;)
